(2 points for 1 1/2 cup serving)
1 spray(s) cooking spray
2 medium leek(s), chopped (white parts only)
8 medium tomato(es), ripe, beefsteak, cored and chopped (about 3 lbs)
1 tsp dried thyme
1 piece(s) bay leaf
4 cup(s) vegetable broth
12 oz fat-free evaporated milk
1/4 Tbsp basil, fresh, chopped
1/8 tsp table salt, or to taste
1/8 tsp black pepper, freshly ground, or to taste
1 Tbsp thyme, fresh (for garnish)
Directions:
Coat a large saucepan with cooking spray and set pan over medium heat. Add leeks and sauté until soft, about 5 minutes. Add tomatoes, thyme and bay leaf; cook, stirring occasionally, until tomatoes break down, about 5 minutes.
Add broth and reduce heat to low; simmer, covered, 10 minutes. Remove from heat and remove bay leaf.
Puree tomato mixture in saucepan using an immersion blender. Or, working in batches, puree tomato mixture in a blender until smooth (be careful not to splatter hot liquid); return puree to saucepan and set pan over low heat. Add milk and simmer 1 minute to heat through. Remove from heat and stir in basil; season to taste with salt and pepper. Garnish with thyme and serve. Yields about 1 1/2 cups per serving.
Now try if you will but the reason I disliked this soup so was because the appearance was awful. I think it was the evaporated milk. It made the soup look like it was curdled and not as pretty as my normal soup. The flavor was alright but I didn't love it. And I want to love my food gosh darn it. So try if you dare.
The reason I decided to make this was for a dinner with a cutie patootie I'm seeing. He lives in the Tustin are so we shall call him Tustinman. Well anyway we wanted comfort food, tomato soup and grilled cheese. Yum yum. obviously the soup was poop, but the grilled cheese made my life. He made that, but with delicious laughing cow garlic herb cheese, muenster, and shredded cheddar on whole wheat. I spent quite a few points that night but hey.. have them for a reason am I right? Well anyway after two glasses of wine, I'm such a lite-weight the man convinced me to stay. I did but luckily I have a friendly little monthly visitor so no lines could be crossed but there was cuddling. He is so cute and nice, even if he does live with two girls.
Thats all for now.
Later loves
