Pizza Party!

I have been craving pizza for weeks so I said to myself, self, make a pizza! Or two and have a fantastic dinner party. I even decided to make the pizza healthy, whole wheat. Both recipes below will be worth 3 points a slice, and ladies these pizzas are cut into 8 pieces, not just 2...don't be ridiculous.

First the dough. This will make enough for two pizzas, just cut down the middle after the rise and role out to size..haha a rhyme.

Pizza Dough
Ingredients:
1 pkg. dry yeast
2 tsp. sugar
1 cup very warm water. (110 F)
3 Tbsp. olive oil
3 cups whole wheat flour
1 tsp. salt

Directions:
1. Using a standing mixer bowl combine yeast and sugar. Stir in the water and make sure the yeast activates and becomes bubbly. Super fun to watch, and should take between 5 and 10 minutes.
2. When you see the foam, add the olive oil. Stir in the flour and salt to make a sticky dough.
3. Using the dough hook in the mixer combine until dough is elastic and forms a ball.
4. When a ball forms, knead dough to form a round ball. Coat a mixing bowl with olive oil and place rounded dough inside. Cover the bowl with a damp kitchen towel or plastic wrap and set in a warm place to rise for at least 30 minutes.
5. When ready to use heat the oven to 375F. Cut the dough in half and roll to form whatever shape you need.

Margherita:

4 tomatoes (roma are best but any will work) sliced thin
10-12 basil leaves julienned (reserve some basil for sprinkling after the bake)
12 ounces fresh buffalo mozzarella sliced thin.
red pepper flakes (optional)
2 Tbsp. parmesan shredded

Split the toppings over the two pizza and bake 15-20 minutes until golden.

Option #2 Spinach, turkey, mushroom ,and garlic herb cheese.
2 packed cups spinach
2 packed cups arugula
4 Tbsp. parmesan
10 ounces sliced turkey lunch meat
1 cup mushrooms sliced thin
6 wedges of Laughing Cow garlic and herb cheese

Split toppings evenly over both pizzas and bake 15-20 minutes until golden.

Both pizzas again are 3 points per serving which is a slice, 8 slices per pizza.

I hope you enjoy!
