Been Gone So Long, But Don't BE Blue!!!

Hey all,

Sorry Sorry Sorry all, but I am back now. And with fun news, I have a man...a younger man! I'm officially a puma. He is only 2 years younger but still you know the drill. He is so cute, and my younger brother's good friend from grade school. We went to school together as youngins and his older sister and I played sports together. Ahh memories. He is not of my usual style, but wooo I'm happy.

So this will have to be a short up date other than showing my lovely mug...I did make these amazing cupcakes for a bday party on Saturday. The birthday boy loves Blue Moon so I decided to make cupcakes out of it and then also put Triple sec in the frosting....here is the recipe.

Makes 20 to 24 cupcakes

For the Blue Moon Chocolate Cupcakes
1 cup Blue Moon
1 cup (2 sticks) unsalted butter

2 3/4 cups all purpose flour
2 cups sugar

1 1/2 teaspoons baking soda

3/4 teaspoon salt

2 large eggs

2/3 cup sour cream

Make the cupcakes: Preheat oven to 350°F. Line 24 cupcake cups with liners.
1. Bring 1 cup Blue Moon and 1 cup butter to simmer in heavy large saucepan over medium heat. Cool slightly.

2. Whisk flour, sugar, baking soda, and 3/4 teaspoon salt in large bowl to blend.

3. Using electric mixer, beat eggs and sour cream in another large bowl to blend. Add beer-butter mixture to egg mixture and beat just to combine.

4. Add flour mixture and beat briefly on slow speed. Using rubber spatula, fold batter until completely combined.

5. Divide batter among cupcake liners, filling them 2/3 to 3/4 of the way. Bake cake until tester inserted into center comes out clean, rotating them once front to back if your oven bakes unevenly, about 17 minutes. Cool cupcakes on a rack completely.

For the Frosting...I didn't calculate right so test out the proportions.

3 to 4 cups confections sugar or more to desired texture
1 stick (1/2 cup or 4 ounces) unsalted butter, at room temperature

3 to 4 tablespoons Triple Sec..or more to taste
Blue Gel Food Coloring until you reach the hue of your dreams..or that matches the label.

Make the frosting: Whip the butter in the bowl of an electric mixer, or with a hand mixer, for several minutes. You want to get it very light and fluffy. Slowly add the powdered sugar, a few tablespoons at a time.
When the frosting looks thick enough to spread, drizzle in the Triple Sec and whip it until combined. If this has made the frosting too thin (it shouldn’t, but just in case) beat in another spoonful or two of powdered sugar. Now mix in the blue gel to desired hue.
Ice and decorate the cupcakes. I used a pastry bag and tip for swirling just right!
